• SimpliThai Matsaman Curry cooking sauce
• 400 ml coconut milk (Aroy-D)
• 1 lb potatoes
  
• 3 carrots
  
• 1-2 medium size yellow onion
• 2-3 cinnamon sticks, 3 star Anise, 2 bay leaves
  
• Roasted crushed peanuts
• 2 cup Thai Jasmine rice (makes 4 cups cooked)
• Thai chilis (optional)
